Huevos Revueltos – Mexican Scrambled Eggs Make The Perfect Weekend Brunch

Paleo fans are constantly looking for new ways to cook eggs. Huevos Revueltos are Mexican scrambled eggs. It’s a really tasty dish that combines some of the best paleo foods and flavours. Best of all, it’s super simple. The pics below are probably self explanatory, but in case you’re not super confident in the kitchen here are the details anyway. Huevos revueltos make a particularly good weekend brunch.

Serves Two


  • Olive oil
  • Salt and Pepper
  • Six eggs
  • A red pepper
  • A bunch of scallions
  • A bunch of coriander
  • An avocado
  • A lime
  • A sprinkle of paprika


Step 1: Beat the eggs with some salt and pepper

Step 2: Heat olive oil in a pan, add chopped scallions, red pepper and chopped coriander stalks. Save a few chopped scallions and the coriander leaves for later.

Step 3: Cook this off for a couple of minutes (I like my peppers with a crunch, but as you wish). If you have a rock hard avocado consider chopping it and adding to the pan to soften it a bit.

Step 4: Add the eggs and scramble just like you would with scrambled eggs. If you don’t know how to scramble eggs get on the phone to your Mammy.

Step 5: Top with coriander and a sprinkle of paprika and serve with chopped lime. And a Bloody Mary, if you’re in a bad way.
