My espresso chocolate energy balls are the perfect snack before or after a workout, or just when you need an energy boost during the day. They’re sugar and gluten free, clean and paleo. Some people might be put off by the sugar content in the dates but if you’re going to eat these snacks before or after a workout you might just be glad of the boost! The protein will fill you up and fuel your muscles, the raw cacao has all sorts of health benefits and the addition of espresso gives an extra kick.
Makes 20 servings
- 100g dates
- 80g almond butter
- 2 shots espresso
- 60g chocolate whey protein
- 30g raw cacao
- 30g dessicated coconut
- 20g chopped nuts
Step 1: Whizz the dates in your blender, if they’re hard soak them in boiling water first. Add a shot of espresso to help them get to a paste like consistency. If you don’t have an espresso machine a strong shot of instant coffee will do. Add the almond butter and mix. This is your paste and the base for your balls.
Step 2: Add the dry ingredients. I used the ingredients and quantities above and they tasted bleedin amazeballs (literally), but basically at this point you can add any mixture of protein, cacao, nuts, seeds, coconut or chocolate chips as you like, until you get the consistency that you know will hold its shape. I saved the second shot of espresso and added it at this point to help the mixture to bind.
Step 3: Shape the mixture into balls and roll them in coconut or cacao for a nice finish. Pop them in the fridge to set for a bit and enjoy. Portable, nutritious and damn tasty balls!
