The best Paleo recipes are simple and quick and don’t involve a lengthy list of unpronounceable ingredients. Like these coconut bars that have just four ingredients. I wrap them individually and put them in the freezer. That way I can grab one every morning when I’m heading out the door. They’re great for a pre gym snack or when you’re on the go in work.
Makes 10 bars
2 cups desiccated coconut
1 heaped tablespoon raw cacao
10 Medjool dates, soaked in boiling water to soften
2 tablespoons coconut cream
1. Place all of the ingredients into your blender or food processor
2. Blend until well combined, this may take a little while
3. Press the mixture into a loaf tin lined with baking paper, place the mixture into the freezer to set
4. Slice and enjoy!
